Cashew, avocado and mango Pâté

cashew and avocado pateA great vegan alternative, providing copious amounts of good fat and containing enough proteins to sustain you throughout the day.

You’ll need:

  • a handful of overnight soaked cashews
  • 1 small avocado
  • half the amount of avocado in mango
  • half a garlic clove
  • a handful of chopped coriander
  • 2 squeezes of lime
  • a pinch of red chilli flakes

Now what to do?

Simply combine all the ingredients (but the mango)  in a blender until smooth and silky.

When you are happy with the consistency, add the finely chopped mangoes.

Refrigerate for at least an hour.

Serve with your choice of bread or cracker or simply with a salad.
