Who doesn’t love an easy, delicious, nutritious and cheap recipe?
This is an exciting little pot of goodness, bursting with beneficial fat and probiotics. It is way cheaper (and creamier) than any of the store-bought coconut yogurt and takes two minutes to get together.
You will need:
- 1 can of organic coconut milk
- 4 capsules of probiotics
- 1 teaspoon of vanilla bean paste (optional)
- 1 tbspoon of coconut sugar (optional but helps feeds the bacteria )
Now, what to do?
Simply whisk together the probiotics, coconut milk, and vanilla bean paste and put in a very clean mason jar. Leave it to rest for 48 to 72 hours at room temperature, wait for it to become a bit creamier and then put it in the fridge, it will become thicker then ! And that is it!
If you want to make more, simply keep 2 large tbspoon of the first batch and follow the recipe again without using the probiotics.
You can enjoy it on its own, with a bit of honey, fruit compote, granola, lemon, fresh berries or whatever you fancy, Enjoy !

Hey Laurence! yes I remember, it was lovely to meet you, we had so much in common 😉 I have used Bio-Kult as my probiotics. And the vanilla bean paste is found in a small jar ( found mine at Waitrose or Infinity food) but you could totally use the inside of the pod if you wanted to. hope this help xx Lola
