A winter warming, Moroccan-inspired lentils and red peppers dish bursting with flavours! Lentils are a wonderful way to: support your heart ❤️, lower cholesterol, make you feel fuller for longer, maintain your energy level constant and maintain optimal gut health. Indeed it is a good food of protein, soluble and insoluble fibre, magnesium, iron, potassium and folate with virtually no fat. This dish is also quick and easy to make: fry 3 onions + 2 red pepper in coconut oil until nice and juicy + add 3 minced garlic cloves + 2 tbsp of good quality ras el hanout + 1/2 teaspoon of turmeric and cumin+ 1 teaspoon of harissa ( adjust according to taste as some can get supa hot ) + 3 diced tomatoes + reduce gently for 5mn + add 2 small jars of already cooked lentils + cook an extra 5mn. It is served with shredded coconut, saffron brown rice bulghur. Top with roasted almond pistachios, coriander and rose petals. Enjoy 😘
